Hickory BBQ Sliders with Coleslaw
Ingredients
- Meat, sliced into thin rectangles - 8 oz (225g)
- Salt
- Pepper
- MJ’s Smoked Hickory BBQ sauce - 1 cup
- Shredded cabbage (green and purple) - 2 cups
- Carrot - 1
- MJ’s mayonnaise - 1/4 cup
- MJ’s Apple Cider Vinegar - 1 tablespoon
- MJ’s Dijon Mustard - 1 teaspoon
- MJ’s Honey - 1 teaspoon
- Slider buns or small rolls
- Sliced red onion
- Sliced dill pickles
Instructions
1. Prepare the BBQ Tempeh:
• Season the tempeh slices with salt and pepper.
• In a shallow dish, pour the MJ’s Hickory BBQ sauce over the tempeh slices, ensuring they are well-coated. Marinate for at least 30 minutes, allowing the flavors to soak in.
2. Prepare the Coleslaw:
• In a mixing bowl, combine the shredded cabbage and grated carrot.
• In a separate bowl, whisk together the MJ’s mayonnaise, MJ’s apple cider vinegar, MJ’s Dijon mustard, MJ’s honey, salt, and pepper until well combined.
• Pour the dressing over the cabbage and carrot mixture. Toss to coat the veggies in the dressing. Adjust seasoning if necessary.
• Refrigerate the coleslaw for about 15-30 minutes to let the flavors meld.
3. Cook the BBQ Meat:
• Heat a non-stick skillet or grill pan over medium heat.
• Place the marinated tempeh slices on the skillet and cook for about 3-4 minutes on each side, or until they are heated through and have a nice caramelized coating of BBQ sauce.
4. Assemble the Sliders:
• Slice the slider buns or small rolls in half.
• Place a slice of BBQ tempeh on the bottom half of each bun.
• Top the tempeh with a generous spoonful of coleslaw.
• Add a few slices of red onion and a couple of pickle slices on top of the coleslaw.
5. Serve and Enjoy:
• Place the top half of the bun on the slider to complete it.
• Serve the Hickory BBQ Tempeh Sliders with extra coleslaw on the side and your favorite side dishes, such as sweet potato fries, corn on the cob, or a mixed green salad.
