MJ’s Coconut Milk Rice Pudding
Ingredients
- Jasmine rice or basmati rice - 1 cup
- Water - 2 cups
- MJ’s Coconut Milk - 1 can (14 oz / 400 ml)
- Granulated sugar (adjust to taste) - 1/4 cup
- Vanilla extract - 1 teaspoon
- Pinch of salt
- Ground cinnamon or nutmeg, for garnish (optional)
Instructions
1. In a medium saucepan, rinse the rice under cold water until the water runs clear. Drain well.
2. In the same saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil over medium-high heat.
3. Once boiling, reduce the heat to low, cover the saucepan with a lid, and let the rice simmer for about 15-18 minutes, or until the water is absorbed and the rice is tender.
4. Stir in the coconut milk, granulated sugar, vanilla extract, and a pinch of salt.
5. Continue to cook over low heat, stirring frequently, for another 15-20 minutes. The mixture will thicken as it cooks.
6. Taste the rice pudding and adjust the sweetness if needed by adding more sugar.
7. Once the rice pudding has thickened to your desired consistency, remove it from the heat.
8. Divide the rice pudding into serving bowls.
9. If desired, sprinkle ground cinnamon or nutmeg on top for added flavor.
