MJ’s French Mustard Potato Salad
Ingredients
- Cooked and diced potatoes (about 4-5 medium potatoes) - 4 cups
- MJ’s Mayonnaise - 1/4 cup
- MJ’s French Mustard - 2 tablespoons
- MJ’s Olive Oil - 1 tablespoon
- Green onions, thinly sliced - 2
- Chopped fresh parsley - 2 tablespoons
- Salt
- Black pepper
Instructions
1. In a large bowl, combine the cooked and diced potatoes.
2. In a separate bowl, whisk together the mayonnaise, French mustard, olive oil, salt, and black pepper to create the dressing.
3. Pour the dressing over the potatoes and gently toss to coat the potatoes evenly.
4. Add the sliced green onions and chopped fresh parsley to the potato mixture and toss again.
